Preheat the oven to 250°C. Par boil whole potato for approx. 10 minutes, or until tender to the touch, but firm in the centre. Remove from hot water and chill immediately. Once cooled, slice thinly into rounds and set aside.
In a small bowl, mix Lee Kum Kee XO Sauce, minced garlic, pepper and olive oil. Mix well and spread across the base of the pizza. Sprinkle grated cheese on top, then layer potato, red onion and baby spinach, spread evenly across the pizza.
Crumble hot smoked salmon across the top and then layer mozzarella rounds evenly across pizza. Put into hot oven for 10 – 12 minutes (turning halfway so it cooks evenly). Pizza should be golden brown.
Serve immediately, sprinkling more Lee Kum Kee XO Sauce across the top.
