Marinade the chicken wings for at least 2 hours or ideally overnight.
Remove chicken wings from marinade and set the marinade aside. Heat the oil in a wok over medium heat, add the ginger and sauté till fragrant.
Add chicken wings, browning them, about 3 minutes on each side.
Add the cola drink, the remaining marinade and spring onion, bring to a boil.
Cook till the sauce is reduced by half, then add lemon juice, mixing until the chicken wings are well coated with the sauce.
Discard the spring onion. Serve the chicken wings immediately.
